Baking or cooking is not necessarily my strongest point, but I do like trying things, experimenting I guess.
There was a time when I used to cook or bake every day and I was pretty good at it if I say so myself. Meal prep for one week, all sorts off desserts, but then I stopped for a while.
Now that I’m obviously home all the time I decided to go back to it again and the first thing I wanted to bake was banana bread, of course. There’s one thing I love more than coffee in the morning and that is coffee with banana bread.
What I prefer to do is find the easiest recipe and add more things in case I’m in the mood for it. Usually, I go for this banana bread, which is the basic one I guess, but I do love me a chocolate chips and walnuts one.
- 4 Bananas, ripe
- 1 tsp Baking Soda
- 2 cup Flour
- 1 cup Sugar
- 1 tsp Vanilla
- 2 Eggs
- 1/2 cup Vegetable Oil
I always start with the wet ingredients, so take your bananas and mash them up (I always do it with a fork). Then I add the vanilla, the eggs, and oil. Mix that and in a separate bowl start mixing your flour, sugar and baking soda. Once that’s done too you can now mix the wet and dry ingredients together.
I always keep half a banana, slice it up and put it on top of the mixture before it goes into the oven.
And this is the final result
To be honest, I don’t keep it in the oven for a specific time, I just keep checking it and once I think it’s all done I check the inside with a toothpick and if nothing comes off then it’s ready to go in your belly!
As I said, you can always add chocolate and almonds or walnuts and trust me that takes it to another level!
